* did you enjoy the weather this week? seriously - the warmest i've been in ages.

* this is my it's-finally-the-end-of-the-semester-so-i'll-write-all-my-assignments-on-a-sticky. i do this almost every semester because it helps me see the light at the end of the tunnel. only one more week!

* a family in our ward just had a baby so we took them one of our favorite dinners - creamy black bean chicken soup. and just to prove how much i love you all, here is the recipe. you're welcome :)

creamy black bean chicken soup
(serves 3-4)

- 2 chicken breasts
- 1 cup chicken broth
- 1 cup salsa
- 1 can corn, drained
- 1 can black beans, drained
- 1 pkg. taco seasoning
- sour cream
- grated cheddar cheese

place chicken in crock pot. pour broth, salsa, corn, beans, and taco seasoning over chicken. cook on low for 6 hours. remove chicken and shred. add sour cream and cheese to crock pot and stir until smooth. re-add chicken and warm. serve with tortilla chips. (if you want to cook it faster, use thawed chicken and turn it on high. this usually takes about 3 hours.)

* oh and i went to the lucky one this past week with some of the blackham girls. it was one of the cutest chick flicks i've seen in a long time. and the music - to die for! i suggest it for any girl out there looking to be swept up. (just make sure to close your eyes through a couple minutes in the middle. just sayin'.)
